Mexican Chicken

I got this recipe from Kelly

Sticking to being myself... I tweaked her original recipe a little bit.

I browned my chicken in a little olive oil on the stove, and then used my crockpot to add all the liquid ingredients (rotel, COM and COC soups, and enchilada sauce).
I added a can of enchilada sauce to her original ingredients just to give it more of a mexican kick. I just let the chicken in the sauce cook for a few hours until it fell apart when I stirred it. It took about 4 hours on high, although the chicken was cooked through before that. If you dont like to fiddle with the crockpot, still make this using her easy way... it is well worth it! So simple, and so good! AND I used flour tortillias instead of corn- I am not a big fan of corn tortillias- unless they are fried into chips! :-)

Her original recipe is as follows


3-4 chicken breasts, boiled and cut into bite size pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel
1-2 cups cheddar cheese
Package of corn tortillas (small) OR FLOUR as I used
1 can enchilada sauce (optional- but it made mine good!!)

Tear the tortillas into small pieces and line the bottom of a pan. Mix together the soups, rotel and chicken and pour on top. Top with cheddar cheese. Bake at 350 for 30 minutes or until cheese is bubbly. Seriously - it's that easy!

Cutie Pie

OH! Look, a post NOT about food.... I have a post about a yummie dinner I made the other night... but I am pressed for time, I will post it in the next couple of days.

Dan was holding Griffin the other day and as usual, Griffin had to take Dans glasses off. So we let Griffin try them on. I don't think I have ever seen a cuter kid in glasses!

Greek Chicken Gyros and Oven Roasted Potatoes

I think part of the trick for the sauce is to get GREEK yogurt. Of course I couldn't find any at the commissary the other day, so I got regular plain yogurt. My sauce was a tad runny... but it still tasted good.
And the potatoes were FAB!!

The Ungourmet marinated her chicken all day in the following ingredients and placed it on the grill to cook.
I of course don't grill well, so I did my version by browning my chicken in a little olive oil, then placing all the ingredients in the crock-pot to let it cook all afternoon. It was super tender and just naturally shredded itself. So I just stirred it up in all the juices! The chicken had a great taste.

For Chicken:
juice from 1 lemon
1 1/2 tsp minced garlic
1 tsp oregano
1/2 tsp marjoram
1/2 tsp onion powder
1/2 tsp kosher salt
cracked pepper

Cucumber Sauce:
1 cup of Oikos Greek Yogurt
1/2 cucumber, peeled and grated
1/2 tsp minced garlic
1/2 tsp oregano
pinch of dill
1 tsp olive oil
1/2 tsp salt
(To this I also added 1tsp of seasoned salt)

Squeeze all the water you can get out of your cucumber. Combine all ingredients and allow to sit in the fridge for at least an hour for them to combine well.

For the potatoes- I follwed her directions exactly-
Wash and slice in about 1/4" slices. Brush with olive oil and sprinkled with a mixture of kosher salt, paprika, oregano, onion powder, and cracked pepper. I placed them in a 425 degree oven to cook (20 mins or so... just keep an eye on them, and test them with a fork to make sure they are tender) and then finished them under the broiler to brown them just a touch more, which also made them crispy!

Place chicken on warmed flatbread, add grated cucumber, tomatoes, lettuce, (we also added Feta and Greek olives) and don't forget the sauce!!
